Healthy Appetizer - The Artichoke with Lemon Mayo Dip

Ok, here is one of my long time favorites. It is so easy, and tastes fantastic. The artichoke is filled with essential vitamans and minerals and it’s unique, meaty taste, makes it a real crowd pleaser.
Try this one out. Grab a fresh artichoke from the produce section and slice the tips off the top of it. A nice flat line should appear where the rounded top once laid.
Set up the steamer and get the water boiling. Place the artichoke in the steamer for about 45 minutes or until the leaves fall off easily with a slight tug.
The sauce is super easy as well. Take 4 tablespoons of Mayonaisse. I like the mayo with Olive Oil added to it.
Squeeze 1/2 lemon juice and add 1 teaspoon of Olive Oil. Then simply take 3 pinches of pepper and mix it all together with a spoon. Make sure to get it nice and creamy.
