Green Bean Salad - Soooo Good and Easy to Make!

We all know that nutrition is very important. Without proper nutrition, it is virtually impossible to obtain optimal health. This is why I choose to blog on recipes that I know are delicious and easy to make.
Here is the latest and greatest from Anita Pisani, my mother!
Bon Appetite! 
- 2 lbs. fresh string beans, boiled 5-6 mins. Rinsed and cooled.
- Stir: 1 fresh shallot finely chopped into 1/4 c. extra virgin olive oil, add salt and black pepper.
- Chop one fresh tomato and add to oil mixture. Pour onto beans and toss.
- Toast 1/4 c. chopped walnuts and add to beans.
- Add 2 tbls. freshly chopped parsley and serve.
